
Ingredients
- 300g pasta (penne, spaghetti, or your favourite)
- 2 cups mixed fresh vegetables (e.g., bell peppers, cherry tomatoes, zucchini, broccoli, or any seasonal favourites), chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- Salt and black pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil or parsley leaves for garnish (optional)
Instructions
- Cook the pasta according to package instructions until it’s al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until it becomes fragrant but be careful not to let it brown.
- Add the chopped mixed vegetables to the skillet. Season with salt and black pepper. Sauté the vegetables for about 5-7 minutes or until they are tender yet still crisp.
- Combine the cooked pasta with the sautéed vegetables in the skillet. Toss everything together until well combined.
- If desired, sprinkle grated Parmesan cheese over the pasta and toss again to incorporate.
Serve the Pasta Primavera hot, garnished with fresh basil or parsley leaves for a burst of colour and flavour.
