For the Wraps

  • Whole-grain tortillas (1 per person)
  • Hummus or Greek yogurt (as a spread)
  • Assorted colourful veggies (e.g., bell peppers, cucumbers, carrots, cherry tomatoes, spinach leaves)
  • Sliced cheese (optional)For the Dipping Sauce
  • Greek yogurt or sour cream
  • Lemon juice
  • Fresh herbs (e.g., dill, parsley, or cilantro), chopped
  • Salt and pepper, to taste

Instructions

  1. Prep the Ingredients
    Wash and slice the colourful veggies into thin strips or rounds. Let the kids choose their favourite colours and shapes.
  2. Make the Dipping Sauce: In a small bowl, mix Greek yogurt or sour cream with a squeeze of lemon juice and chopped fresh herbs. Add a pinch of salt and pepper to taste. Let the kids mix it up.
  3. Assemble the Wraps: Lay out the tortillas on a clean, flat surface.
    Spread a generous dollop of hummus or Greek yogurt onto each tortilla, leaving a small border around the edges.
  4. Add the Veggies: Let the kids get creative by arranging the colourful veggie strips and cheese (if using) in the centre of each tortilla.
  5. Roll Up the Wraps: Show the kids how to fold in the sides of the tortilla and then roll it up tightly like a burrito. You can secure it with a toothpick if needed.
  6. Serve and Dip: Place the Rainbow Veggie Wraps on a plate and serve them with the homemade dipping sauce.
