Wash and slice the colourful veggies into thin strips or rounds. Let the kids choose their favourite colours and shapes. - Make the Dipping Sauce: In a small bowl, mix Greek yogurt or sour cream with a squeeze of lemon juice and chopped fresh herbs. Add a pinch of salt and pepper to taste. Let the kids mix it up.
- Assemble the Wraps: Lay out the tortillas on a clean, flat surface.
Spread a generous dollop of hummus or Greek yogurt onto each tortilla, leaving a small border around the edges. - Add the Veggies: Let the kids get creative by arranging the colourful veggie strips and cheese (if using) in the centre of each tortilla.
- Roll Up the Wraps: Show the kids how to fold in the sides of the tortilla and then roll it up tightly like a burrito. You can secure it with a toothpick if needed.
- Serve and Dip: Place the Rainbow Veggie Wraps on a plate and serve them with the homemade dipping sauce.
